Gastronomy

Our meals are made mostly with organic products whenever possible. This includes cheese, fruits and vegetables.  We have a large selection of organic grains, dried beans and other dry goods, most unprocessed to retain all their nutritive values and freshness. Bread and other baked goods are always fresh from the wood fired oven. We usually can accommodate people with food allergies or food preferences if you let us know in advance. We prepare our meals with organic vegetables from our garden as much possible. The selection of our garden produce depends on the time of the year you visit.  Our garden is usually producing adequately in July.

Our coffee is fresh ground, organic and of the best quality.  We also share our homemade wine in moderation at no cost to you at dinner time.

Because of the Canadian Dept of fisheries regulations which makes it impossible for local small businesses to serve fresh fish anymore, our business cannot serve fresh seafood as part of our business.
But you are welcome to share the catch of the day with our family during meals at no cost... 
Our family eat a variety of fish species such as rock fish, halibut, lingcod, salmon, crabs, mussels, sea urchins and sometimes Octopus.

If you are vegetarian or vegan: Let us know in advance especially if you have any food restrictions.  As long as you do not mind other people eating dead things at the table, no problem!

Patrick, who has a PHD in dishwashing, takes care of most  breakfasts.  He also is extensively involved with bread making.  Maybe he will let you try his 10,000 years old Ancestral Belgian family recipe: the "Awful Belgian Waffles".
Deadly if  you're on a diet or have a cholesterol problem.

We have quite a variety of options for you to choose from.  From homemade granola to muffins, Eggs to pancakes, we have quite a range of possibilities to choose from.  We do not use cow milk so only use soya or rice milk.

Breakfast and dinner are served at our table in our house and set in a family setting where everyone enjoy each others company and conversation.  We sometimes have lunch outside when the weather allows or we take a hefty lunch with us on our guided trips you chose for an adventure.

Walladda, makes sure Patrick feeds you more then waffles...  Born and raised in the rural part of Thailand, she is proficient at cooking meals which are healthy and savoury. 

Thai people are extremely fussy about the food they eat, especially Walladda.  Her favourite food are seafood and fresh vegetables from the garden.  We always share our ocean catch of the day with our guests at no extra cost to you.  Our staple food is rice because we feel it is the healthiest food you can eat.  We have an ample supply of different kinds of organic rice.  We do try to alternate with couscous, quinoa, millet, noodles and pasta.

Walladda does her best to re-create Thai and Asian foods from her native land with little difficulties.  Patrick makes sure she tones down the hot spices which Thai people eat LIKE CANDIESfor breakfast otherwise we may run out of water for the guests.
